This recipe is suitable for vegans, zero-wasters, and those with a gluten intolerance!

The pizza crust can also be sliced up and topped with jams, spreads, vegan cheeses or anything your heart desires. It’s simple and delicious! So, let’s dig in!

Crust : Preheat oven to 450

3/4 cup quinoa (found in bulk aisles)

1/2 cup water

2 tsp baking powder

1 tsp garlic powder *

2 tsp basil *

1 tsp oregano *

1/2 tsp salt

* omit these herbs if you are using the crust recipe for a regular bread and not pizza

1. Soak your quinoa in a bowl of water for 15 mins. Then strain out the water and add the 1/2 cup water from recipe.

2. Add all other ingredients and blend thoroughly.

3. Pour batter into a glass dish that has been rubbed with oil.

4. Put in oven and bake for roughly 20 minutes or until you can poke a hole in the center with the fork coming out clean.

Cheese Topping

3/4 cup raw cashews

2 tblsp apple cider vinegar or lemon

1 garlic clove

2 tblsp coconut oil

1 tsp dried thyme (or two fresh sprigs)

1 TBLS white miso paste (possible to omit using 1.5 tspsoy sauce and 1/2 tsp sesame oil as a zero waste substitute. OR equal amounts tahini)

3 TBLSP nutritional yeast (found in bulk aisle)

1. Boil cashews in water for 10 mins on a constant rolling boil OR soak for 2 hours in water.

2. Strain all water from cashews

3. Using a high power blender such as a nutribullet, add all other ingredients and blend until creamy and free of any lumps!

*You can also freeze this mixture into a mold of your choice (use olive oil in it to prevent sticking) for 10 mins and then transfer to the fridge to create a semi-solid spreadable cheese for crackers etc. I roll this solidified chilled cheese into a ball and crust it in herbs and cranberries for guests.

Assembling Your Pizza!

After you take your crust out of the oven, give it a minute or two to cool down, then spread a generous amount of cashew cheese over the surface. Make sure to put the cheese before any sauce is added!

Next, top with your favorite pizza sauce and toppings, pop it back in the oven at 450 for ten more mins and voila! You have a protein packed, guilt free, pizza!

Be generous with your sauce! It will get most of its flavor from the sauce and toppings!


The Nitty Gritty on Energy Waste

What do you think of when you hear the word ‘waste’? Odds are that you pictured trash, surplus food, or some form of a landfill. Did you picture coal fires and your electric bill? Probably not. The truth is that energy waste is ever-present and just as threatening to the environment as solid wastes are.

This article is going to be broken down into three parts:

  1. Where does energy come from
  2. What are the repercussions of using non-renewable energy
  3. What can we do to help conserve energy daily

Where Does Energy Come From?

For the purpose of this article, we are speaking solely about electricity. 

There are numerous sources of energy and (thankfully) sources of renewable energy are increasing due to research. The main sources of electrical energy are chemical energy, thermal energy, kinetic energy, nuclear energy, solar energy, and rotational energy.

Chemical energy is energy that is stored and needs to be released. The most common way to release this energy is through combustion. Chemical energy is what we speak of when we talk about fossil fuel usage. It can include burning coal, oil, natural gas, or biomass (wood, solid wastes etc).

Thermal energy is energy created from heat. This can include the same things as chemical energy, but adds on heat from underground springs and more.

Kinetic energy is probably the one we are most familiar with from childhood classes. Kinetic energy is produced through movement. Where electricity is concerned, however, kinetic energy comes into play with wind turbines or water movement.

Nuclear energy is becoming more popular as well. This energy is one that is stored inside atoms and molecules. When you release nuclear energy, it can also release radioactivity and thermal energy.

Solar energy is energy that is captured from the sun through the light rays. The heat from the sun’s rays is also a form of thermal energy.

Rotational energy is created using spinning such as a windmill.

With all these types of energy sources, which ones are most popular? Currently, chemical energy is what most electrical grids are using as their main source for providing electricity. Solar energy and rotational energy are also starting to gain ground as forms of renewable energy.

Renewable energy is just that- energy that can be recreated and infinite. Unfortunately, non-renewable energy is exactly opposite, with limited amounts of fossil fuels left to provide for the demand in energy.

So, whats all the fuss about non-renewable energy, anyway?

Repercussions of Non-Renewable Energy Sources

The first thing to be noted about non-renewable energy sources is that we as a world are running low on them. Remember that these sources include coal, oil, and natural gas – to name a few.

The processing of fossil fuels creates quite a few problems for the world and the creatures and plants that live on it. One of these problems is atmospheric destruction.

Atmospheric pollution is created when fossil fuels are processed for electricity. During the processing, the fuels emit greenhouse gases – namely carbon dioxide- which damage the ozone layer of the atmosphere. Not only is this bad for future of the planet, but within our own lives it affects respiratory health drastically. With more greenhouse gases in the air, the worse off your respiratory health will be since you are not designed to process harmful chemicals. When we source fossil fuels from below the ground and release it into the air, we are also disrupting the amount of carbon on earth. Fossil fuels store carbon within them and the only way to release that carbon (as noted above) is through combustion- which produces heat. This heat throws the balance of the earth’s temperature out of wack much faster than would have naturally occurred- making it harder for animals and plants to adapt to.

With crude oil there is not only the atmosphere and human health to consider, but the threat of an oil spill can (and has) contaminated large bodies of water which take out wildlife and harm human health.

Natural gas is another popular fuel used and is made up of methane. To get natural gas, companies use a process called hydraulic fracturing / fracking. This uses high pressure from water to break up rocks below the earths surface which releases the natural gas stored within them. If a rock is too tough to split open, acid can be poured to dissolve it or small pieces of sand and/ or glass can be used as alternative methods of opening the rocks. Natural gas is what we typically use for heat and cooking, however it can also be used for electrical energy, a/c units, and more. One of the most horrible effects of sourcing natural gas is that it has the ability to cause small-scale earthquakes from breaking up the ground with the high pressure water. Also, the water that is mixed with the chemicals below ground has the potential to run into clean water sources which makes daily tasks such as bathing and drinking unsafe.

All in all, natural gas is still a cleaner source of energy when looking at its other non-renewable counterparts.

There are plenty of reasons to avoid non-renewable sources of energy, but while renewable energy starts to take hold there are a few things you can do to cut down on your personal energy consumption; therefore cutting down on the pollution and destruction created from the power plants and grids that supply your electricity.

Conserving Energy

On to the fun stuff! Fun because conserving energy not only promotes human health, clean energy, and a safe planet, but it save you money! Rad, right?

Before you can save energy, you should look at how much you’re currently consuming. This can be found on your utility bills or online in your account summary. Once you access your summary, you should be able to click and see a day-by-day view on energy consumption and track rises and falls with what you were doing that day. On a day where your energy consumption was really high, did you host a party and have all the televisions, speakers, stove tops, and lights on for most of the day?

If you aren’t aware of what you did each day, you could also start an energy-journal where you list out appliances used and lights left on in a normal day. Then, start implementing the tips below and record what you’ve done for energy conservation each day and then on your billing cycle you should be able to match up the days in your journal with your statement and see a gradual decline in energy use!

Tips & Tricks
- Turn off lights when you leave the room
-Unblock vents: upwards of 25% more energy is used to distribute air 
 when you have furniture blocking a vent
-In the winter, maximize use of southern windows by opening blinds and 
 curtains to increase heat gain which will lessen the amount of energy
 needed to heat your space
-In the summer, use solar screen, films, awnings, trees/vegetation to 
 block direct heat on the east & west facing windows of your building. 
-Inspect your insulation and fix any gaps between doors and windows where 
 drafts may exist. 
-Do regular maintenance on your heating/cooling equipment to keep them 
 running as efficiently as possible
-Remove unnecessary lamps and appliances
-Turn off and unplug your electronic items when not in use 
-If you have the ability to, look into replacing your light bulbs and 
 large appliance (fridge, washer/dryer, tvs) with more energy efficient 
-If possible, install solar panels onto your building

Coconut Cornmeal Cake Adaptation



This delectable recipe is one straight from “Thug Kitchen’s” recipe book! If you aren’t familiar with this title, you should definitely swing by a local bookstore and pick up a copy. Not only is it loaded with hearty vegan meals, but it teaches you a little about the basics of cooking, too!

You may have noted that this is an adaptation- meaning it’s not exactly the recipe in the book, but pretty darn close. I updated it with adding a whipped topping and swapping out the white sugar for coconut sugar in order to be slightly more health-conscious.

The recipe below is suited for a one layer of cake, but I highly recommend making a double batch of it and splitting it into two pans then frosting the middle and top.

Coconut Cornmeal Cake Adaptation

1 1/4 C finely ground cornmeal

3/4 C whole wheat pastry flour

3/4 C coconut sugar 

2 tsp baking powder

1/2 tsp salt

1 1/2 C canned full-fat coconut milk

1 tsp vanilla extract 

1/2 tsp grated lemon zest 

  1. Heat that oven up to 375. Grease an 8in round cake pan.
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt. Form a “crater” in the middle of this mix and pour in the remaining ingredients. Stir till fully incorporated.
  3. Transfer this batter into the cake pan(s) and bake for 30-40 mins depending on altitude. You can also test its readiness by sticking a metal ‘toothpick’ into the middle and seeing if it comes out clean. If nothing is sticking to it, your cake is ready.
  4. Set on a drying rack and cool for 10 mins, then place in freezer to chill for 15 (if frosting)

Whipped Frosting

1 can full-fat coconut milk (chilled in fridge overnight) 

2 tsp agave syrup

1/2 tsp almond extract 

  1. Chill your mixing bowl in the freezer 15-20 mins prior to beginning this recipe.
  2. Open the coconut milk and scoop out the thick white cream on top and pour into the bowl.
  3. Add the agave and almond extract and beat on high till it resembles whipped cream ( 2-3 mins).

Decorating Ideas!

For a one layer cake, just go ahead and spread the whipped topping on generously to the top of the cake and decorate with fresh herbs such as sage, rosemary, or mint and add a few seasonal fruits for decoration

For a two layer cake, still decorate the top as seen above, but add about a half in. of topping in between layers and spread from the center outward before placing the second layer on top.

**Make sure to level your cake bottoms if necessary by using a knife to shave off any rounded tops/ bottoms that would make toppings slip off!

Dhal + Rice

Traditional Indian food served in households around the food.

If you talk to a kid raised under in an Indian family, dhal and rice is a familiar sound.

It’s the smell of geera cooking and the taste of comfort. It’s moms slipping vegetables into their kids meals without them knowing. It’s the taste of home.

Typically, my dhal and rice growing up was filled with ghee (processed butter) so I switched it out to a nice coconut oil as an easy vegan fix.

This meal is very low cost and is what I get down to making on that last night before I get paid or on those nights where I simply don’t feel like cooking.

Add in things such as whole coconut milk, different curry powders, tomatoes and veggies to really switch up the taste of you like!

Scratch Ketchup! 



Ketchup is one of those items in your fridge that you never really question- it’s just always there.

When I ran out of my standard plastic bottle of Heinz, I decided to make my own.

Cue the disappointment when all the recipes online called for “can of tomato paste”. I wanted the real deal. The fresh from the market tomatoes so ripe they were bursting with juice.

So, here we are. I’m picking out tomatoes with all my spice jars open- smelling which spice would go well with ketchup and comparing the options until I came up with the beauty.

It’s very high on the apple cider vinegar to give a nice bite to it, but feel free to lower it down to 1/4 of a cup of you prefer a sweeter condiment!

Spread this on any sandwich and happily dip your fries into it!

Mac ‘n Cheese: Vegan

Last Friday, I made the greatest discovery: Bulk pasta.

It has long been a trouble of mine to justify purchasing boxes of past, but no more! Our local Soulard Farmer’s Market has a stand that sells bulk homemade pasta!!

Bring on the comfort food!

There are plenty of vegan mac and cheese recipes floating around out there, so through trial and error I created what I believe to be the simplest, healthiest, and most Zero Waste version!!

Currently I am in love with sketching, so you’ll be seeing a few more recipes pop up in picture format from my personal notebook!

Vegan Potato Leek Soup

Lately, ive been quite obsessed with doodling and have drawn several of my recipes up on notebook paper! 

After putting them up on my personal Facebook page with much success- I decided to post them one by one on here! 

This particular recipe was inspired by an overcast day and a sick boyfriend. To really clear up sinuses with it, get black peppercorns and ground them yourself with a mortar and pestle or in a blender for a few seconds and then add a heaping to teaspoons worth to the soup! Your nose will be runny and un-stuffed three bites in!
